Ceylon cinnamon has a lighter colour, more delicate taste and a more flavourful aroma. It is also more difficult to find and more expensive than the more common Cassia variety. Ceylon Cinnamon is particularly popular because it has lower levels of Coumarin compared to Cassia Cinnamon.
